This easy tasty recipe, featuring Bella Viva Orchards’ Certified Organic Dried Peach Slices, Certified Organic Dried Cherries and Certified Organic Pecans, is sure to bring summer sunshine to your family and friends any time of the year. You can feel good about using more fruit to thicken the crisp, too!

For fruit filling:
5 cups Bella Viva Orchards Certified Organic Peach Slices, divided
1 cup Bella Viva Orchards Certified Organic Dried Cherries, halved
3 cups water
¾ cup granulated sugar
Zest of 1 lemon
Juice of ½ fresh lemon
Pinch Kosher salt
For streusel topping:
¾ cup old fashioned oats
¾ cup chopped Bella Viva Orchards Organic Pecans
½ cup dark brown sugar
¼ cup unsalted butter, room temperature
Preheat oven to 375 degrees F.
To make the fruit filling: Place 4 cups of the Peaches and halved Cherries in a saucepan and add the water. Bring to a simmer and cook for about 10 minutes, stirring and turning fruit occasionally. Add the sugar, lemon zest and juice and salt. Return to heat and simmer, stirring frequently, until the fruit is plump. Remove from heat.
Finely chop the remaining 1 cup Peaches and add to the cooked fruit mixture. Cover and set aside for 10 minutes.
To make the streusel topping: In a large bowl, add the chopped Pecans, oats and brown sugar. With clean fingertips work in the butter until the mixture holds together.
Coat an 8X8-inch baking pan with non-stick cooking spray. Add the cooked fruit mixture. With your fingers, crumble the topping over the fruit.
Bake for about 35 minutes, until the streusel is golden brown and the fruit mixture is bubbly.
Remove from the oven and allow to cool for about 45 minutes. Enjoy with your favorite vanilla frozen yogurt or ice cream.
