In the Kitchen: Mango-Pineapple Energy Balls

These sweet and nutritious energy balls make great grab and go treats for the whole family! Healthy enough to make an anytime snack for the kiddos and sweet enough to enjoy as a treat, this recipe is a great example of using lots of Bella Viva Orchards’ products. This recipe is flexible, so have fun and customize it with your favorite combination of our Dried Fruits and Nuts.

Ingredients:

8 ounces Bella Viva Orchards’ Organic Dried Mangoes

½ cup Bella Viva Orchards’ Clover or Orange Honey

4 ounces Bella Viva Orchards’ Organic Dried Pineapple Rings

½ cup Bella Viva Orchards’ Diced Roasted Almonds

½ cup Bella Viva Orchards’ Organic Brown Flax Seed

¼ cup cacao nibs or dark chocolate chips (optional)

¼ cup Bella Viva Orchards’ Coconut (Sweetened or Unsweetened)

 Water, as needed

Directions:

In the bowl of a food processor, add the Organic Dried Mangoes, Honey and about ¼ cup water. Pulse until mixture has a sticky, pasty consistency and holds together, adding more water as necessary. It’s okay if the mixture is lumpy. Transfer to a large bowl. Dice the Dried Pineapple and add to Mango mixture along with the remaining ingredients except Dried Coconut, adding water as needed to help mixture bind.

Place mixture in fridge for about an hour.

Line two baking sheets with parchment paper. Remove mixture from fridge and scoop out into 1-ounce portions. Roll each portion into a ball, then roll in Dried Coconut.

Enjoy right way or store in the fridge in an airtight container for up to a week.
